How to cook Mushrooms

Mushrooms are a very flavorful and delicate plants that could be used in many different dishes. They come in a variety of shapes, sizes, flavors and textures. Mushrooms are easy to find at your local grocery store and your local farmer’s market.

If you have ever cooked mushrooms, you have noticed that they shrink, and you end up with a substantially lesser amount than what you had initially started with. Don’t worry you’re not delusional about how much mushrooms you had just put into the pan Don’t question your own sanity. If you have experienced this, you are not alone!

Mushrooms are sneaky little vegetables, that do in fact shrink on you. The reason is that they have a large water content, and their texture is like a sponge so they absorb water very easily, but they also loose water just as easily.

Now let’s talk about what you can do, so that you don’t lose a lot of volume when you cook your mushroom. There are two different secrets that will wow you once you use them. Ready?

Secret 1: Don’t overcrowd the pan!

Don’t overcrowd the pan. Put just enough mushrooms in the pan to fill one flat layer and with breathing spaces in between them. In other words, you don’t want the mushrooms to be laying down elbow to elbow, you want them to have room to wiggle. The reason is very logical and simple. This takes us to secret number 2.

Secret 2: Start with High Heat

When you first start cooking the mushrooms, the outside pores need to be sealed to prevent the mushroom from releasing its reserve water. In order to seal the mushroom quickly you will need to start cooking at high heat. If you crowd the pan, the rate at which the pan receives heat from the stove will not be enough to maintain a high enough temperature and the mushrooms will end up losing a lot of volume.
